Soft, minty chocolate cookies filled with a creamy mint frosting, capturing the classic Shamrock Shake in dessert form.

  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1/4 teaspoon mint extract
  • 1/2 cup powdered sugar
  • 1/2 cup heavy cream
  • Green food coloring (optional)
  • Chocolate chips or sprinkles for decoration

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set this dry mixture aside for later.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add in the egg, vanilla extract, and mint extract, mixing until smooth.
  4. Gradually mix in the dry ingredients, alternating with the buttermilk until everything is well combined and smooth.
  5. Drop tablespoonfuls of the batter onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes, or until the edges are set. Let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  7. In a separate bowl, whip the heavy cream with powdered sugar and food coloring (if using) until soft peaks form.
  8. Pipe or spoon the mint cream onto the flat side of one cookie and top with another cookie to create a sandwich.
  9. Add a fun touch by decorating with chocolate chips or sprinkles if desired.
