  • 1 lb boneless, skinless chicken breasts
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Tortillas for serving
  • Optional toppings: sour cream, salsa, avocado, cilantro

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the chicken, red and green bell peppers, yellow onion, olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper in a large bowl.
  3. Spread the mixture in an even layer on a sheet pan.
  4. Bake for 20-25 minutes until the chicken is cooked through and the vegetables are tender.
