A delightful, easy-to-make breakfast featuring fluffy eggs, vibrant veggies, and melted cheese, perfect for serving a crowd.

Ingredients

  • 8 large eggs
  • 1/4 cup milk
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 cup chopped spinach
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Cooking spray or olive oil for the pan

Instructions

  1. Preheat the oven to 350°F (175°C) and spray a sheet pan with cooking spray or lightly coat it with olive oil.
  2. Whisk together the eggs and milk until well combined. Add salt and pepper to taste.
  3. Add the diced bell peppers, onions, spinach, and half of the shredded cheese.
  4. Pour the egg mixture onto the prepared sheet pan, spreading it out evenly.
  5. Bake in the preheated oven for 20-25 minutes, or until the eggs are set and lightly golden.
  6. Remove from the oven and sprinkle the remaining cheese on top.
  7. Let it cool for a few minutes, then cut into squares and serve.

Notes

Leftovers can be refrigerated in an airtight container for up to 4 days. To reheat, warm in the microwave or oven. This recipe is versatile; you can add proteins or different veggies as desired.
