A vibrant and communal dish of shrimp combined with baby potatoes and corn, enhanced by garlic and Old Bay seasoning, perfect for summer gatherings.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 pound baby potatoes, halved
  • 2 cups corn on the cob, cut into smaller pieces
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon Old Bay seasoning
  • Salt and pepper to taste
  • Lemon wedges for serving
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the baby potatoes with olive oil, minced garlic, Old Bay seasoning, salt, and pepper in a large bowl.
  3. Spread the seasoned potatoes out evenly on a sheet pan and bake for 15 minutes.
  4. Add the corn pieces and shrimp to the sheet pan.
  5. Toss everything together and return the pan to the oven for another 10-12 minutes.
  6. Remove the pan from the oven, serve hot with lemon wedges, and sprinkle with fresh parsley.
