  • 2 lbs shredded beef (cooked)
  • 810 flour or corn tortillas
  • 2 cups enchilada sauce
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 small onion (chopped)
  • 1 bell pepper (chopped)
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the shredded beef, chopped onion, bell pepper, garlic powder, cumin, salt, and pepper in a large mixing bowl.
  3. Fill each tortilla with a generous amount of the beef mixture, roll tightly, and place seam-side down in a greased baking dish.
  4. Pour the enchilada sauce evenly over the rolled tortillas.
  5. Sprinkle the shredded cheese on top of the enchiladas.
  6. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Garnish with chopped cilantro if desired, and serve warm.
