Easy and flavorful Shrimp and Sausage Foil Packs perfect for summer grilling and gatherings.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1/2 pound smoked sausage, sliced into 1/2-inch pieces
  • 2 cups baby potatoes, halved
  • 1 cup corn kernels
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped fresh parsley
  • 4 sheets aluminum foil, 12×12 inches each

Instructions

  1. Preheat the grill to medium-high heat (around 400°F).
  2. Combine the olive oil, lemon juice, paprika, garlic powder, onion powder, salt, and pepper in a large bowl.
  3. Add the shrimp, smoked sausage, halved baby potatoes, and corn to the bowl and toss until coated.
  4. Divide the mixture evenly among the four aluminum foil sheets, placing it in the center of each sheet.
  5. Fold the sides of the foil over the mixture and seal the edges to create a tight packet.
  6. Place the foil packs on the preheated grill and cook for 15 to 20 minutes until the potatoes are tender and the shrimp are opaque.
  7. Carefully open the foil packs away from you to release steam.
  8. Sprinkle chopped parsley over the contents and serve hot.

Notes

Prep ahead by preparing foil packs a few hours in advance. Feel free to customize with your favorite vegetables or proteins.
