A refreshing shrimp ceviche that captures the essence of seaside dining with lime, fresh vegetables, and vibrant flavors.

  • 1 pound shrimp, peeled and deveined
  • 1 cup fresh lime juice
  • 1/2 cup red onion, finely chopped
  • 1 cup diced tomatoes
  • 1/2 cup chopped cilantro
  • 1 jalapeño, minced (optional)
  • Salt to taste
  • Avocado slices (for serving)

Instructions

  1. Marinate the shrimp in a bowl with lime juice. Cover and refrigerate for 2-3 hours, or until shrimp are opaque.
  2. Mix in red onion, tomatoes, cilantro, jalapeño, and salt after draining excess lime juice.
  3. Toss the mixture gently to combine all ingredients well.
  4. Serve chilled with avocado slices on the side.
