A hearty and vibrant dish featuring shrimp, fluffy rice, and zesty Cajun flavors, perfect for family gatherings or casual get-togethers.

  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 pound shrimp, peeled and deveined
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 stalks celery, diced
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Green onions, for garnish

Instructions

  1. Sauté the vegetables: In a large skillet, heat olive oil over medium heat. Add onion, bell pepper, celery, and garlic, and sauté until softened.
  2. Add the Cajun seasoning: Stir in the Cajun seasoning and cook for another minute to awaken those rich flavors.
  3. Combine the rice and broth: Add the rice and chicken broth to the skillet. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the rice is cooked.
  4. Introduce the shrimp: In the last 5 minutes of cooking, add the shrimp. Stir them gently into the rice mixture until they’re cooked through and beautifully pink.
  5. Fluff the rice: Once the shrimp is cooked, fluff the rice with a fork to combine all the flavors.
  6. Season and serve: Season with salt and pepper to taste, and garnish with chopped green onions before serving.

Notes

For added flavor, consider using diced tomatoes or a splash of hot sauce. Ensure shrimp are fresh to avoid a rubbery texture.
