A comforting blend of shrimp, rice, and Cajun spices that warms both the belly and the heart.

Ingredients

  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 pound shrimp, peeled and deveined
  • 1/2 cup onion, diced
  • 1/2 cup bell pepper, diced
  • 1/2 cup celery, diced
  • 2 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Rinse the rice under cold water to remove excess starch.
  2. Sauté the olive oil over medium heat. Add the diced onion, bell pepper, and celery. Sauté until softened.
  3. Mix in minced garlic and Cajun seasoning. Cook for another minute.
  4. Combine the rinsed rice with the vegetable mixture.
  5. Simmer with chicken broth and let it cook until the rice is tender.
  6. Cook the shrimp on top of the rice until it turns opaque.
  7. Season with salt and pepper, then fluff the rice gently with a fork.
  8. Garnish with chopped green onions and serve hot.

Notes

For extra depth, consider using homemade chicken broth. Adjust the Cajun seasoning based on your spice preference.
