A light and refreshing twist on the classic shrimp scampi, using spiralized zucchini noodles for a healthier alternative.

Ingredients

  • 4 medium Zucchini (spiralized into noodles)
  • 1 lb Shrimp (peeled and deveined)
  • 4 cloves Garlic (minced)
  • 2 tbsp Olive oil
  • 2 tbsp Butter
  • 2 tbsp Lemon juice
  • 1 tsp Red pepper flakes
  • Salt (to taste)
  • Black pepper (to taste)
  • 2 tbsp Fresh parsley (chopped)

Instructions

  1. Heat the olive oil and butter in a pan over medium heat until fully melted and shimmering.
  2. Add the minced garlic and red pepper flakes, and sauté until fragrant, about 1-2 minutes.
  3. Cook the shrimp, seasoning generously with salt and black pepper, until pink and cooked through, about 3-4 minutes.
  4. Pour in fresh lemon juice and toss everything together.
  5. Sauté the zoodles in another pan for 2-3 minutes until tender but still slightly al dente.
  6. Combine the zoodles with the shrimp mixture, ensuring the noodles are coated in the sauce.
  7. Garnish with fresh parsley before serving.

Notes

Serve immediately for the best texture. Store leftovers in an airtight container for up to 2 days.
