A delightful Shrimp Stir Fry that perfectly marries simplicity with depth, featuring succulent shrimp and vibrant vegetables in a flavorful sauce.

Ingredients

  • 3 tablespoons sesame oil
  • 1 pound shrimp, deveined and shelled
  • 1 pound broccoli, about 4 cups
  • 2 bell peppers, any color
  • 4 ounces shiitake mushrooms (optional)
  • 2 green onions
  • 1 tablespoon minced ginger (optional)
  • 1/4 cup soy sauce
  • 6 tablespoons water
  • 1 tablespoon rice vinegar
  • 2 tablespoons sugar
  • 1 tablespoon yellow or white miso
  • 2 teaspoons cornstarch
  • 1/4 teaspoon garlic powder

Instructions

  1. Thaw the shrimp under cold running water if frozen.
  2. Prepare the broccoli and bell peppers, chopping and slicing as needed.
  3. Whisk the sauce ingredients in a bowl until smooth.
  4. Heat 2 tablespoons of sesame oil in a skillet and sauté the vegetables until crisp-tender.
  5. Cook the shrimp with the remaining oil, green onions, and ginger until nearly opaque.
  6. Combine the shrimp and vegetables in the skillet, pour in the sauce, and cook until thickened.

Notes

Serve over rice or quinoa, and consider adding sesame seeds or greens for garnish. Refrigerate leftovers for up to 3 days.
