A delightful Shrimp Stir Fry that marries fresh ingredients with bold flavors, perfect for busy weeknights or entertaining friends.

Ingredients

  • 3 tablespoons sesame oil
  • 1 pound shrimp, deveined and shelled
  • 1 pound broccoli, about 4 cups
  • 2 bell peppers, any color
  • 4 ounces shiitake mushrooms (optional)
  • 2 green onions
  • 1 tablespoon minced ginger (optional)
  • 1/4 cup soy sauce (or tamari or coconut aminos)
  • 6 tablespoons water
  • 1 tablespoon rice vinegar
  • 2 tablespoons sugar
  • 1 tablespoon yellow or white miso
  • 2 teaspoons cornstarch (or arrowroot powder)
  • 1/4 teaspoon garlic powder

Instructions

  1. Thaw the shrimp if frozen, under cold running water.
  2. Prepare the broccoli into bite-sized florets and slice the bell peppers into strips.
  3. Whisk the sauce by combining soy sauce, water, rice vinegar, sugar, miso, cornstarch, and garlic powder in a bowl.
  4. Sauté the vegetables in 2 tablespoons of sesame oil over medium-high heat for 5 to 6 minutes.
  5. Cook the shrimp in the same skillet with remaining oil, sliced green onions, and ginger for 1 to 2 minutes.
  6. Combine everything in the skillet, pour in the sauce, and cook until the sauce thickens, about 2 to 3 minutes.

Notes

Serve over rice or quinoa, and feel free to add more veggies or make it spicy with sriracha.
