Ingredients

  • 1 lb lean chicken breasts, diced
  • 1 cup rice
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil or butter for cooking

Instructions

  1. Heat the oil in a large pot over medium heat.
  2. Add the onions, carrots, and celery and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute.
  4. Add the diced chicken and brown for 5-7 minutes.
  5. Pour in the chicken broth and bring to a boil.
  6. Simmer with rice and cook for about 15 minutes or until the rice is tender.
  7. Stir in the heavy cream, season with salt and pepper, and heat through.
