Easy Homemade Chicken and Rice Soup

A comforting and simple chicken and rice soup recipe, perfect for chilly days.

Ingredients

  • 2 chicken breasts, cooked and shredded
  • 1 cup rice
  • 4 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 1 cup cream
  • Salt and pepper to taste

Instructions

  1. Bring the broth to a boil in a large pot.
  2. Add the diced onions, carrots, and celery to the boiling broth and cook until tender, about 5–7 minutes.
  3. Stir in the rice and shredded chicken, then let simmer until the rice is cooked through, about 15 minutes.
  4. Add the cream and season with salt and pepper, stirring until well-combined and heated through.
  5. Serve warm in large bowls, garnished with black pepper if desired.

Notes

For a quicker option, use rotisserie chicken. Leftovers can be stored in an airtight container for up to 3 days. Reheat gently on the stove or microwave.
