A cozy and comforting dish made with rotisserie chicken, enchilada sauce, and melted cheese, perfect for quick weeknight dinners.

  • 2 cups shredded rotisserie chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 8 flour tortillas
  • 1 cup black beans (optional)
  • 1/2 cup diced onions (optional)
  • 1/2 teaspoon cumin (optional)
  • 1/2 teaspoon garlic powder (optional)
  • Chopped cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine shredded chicken with half a cup of enchilada sauce and any optional ingredients like black beans, onions, cumin, and garlic powder.
  3. Spread a thin layer of enchilada sauce on the bottom of your baking dish.
  4. Fill each tortilla with the chicken mixture and roll it up, placing seam-side down in the dish.
  5. Pour the remaining enchilada sauce over the tortillas and sprinkle with shredded cheese.
  6. Bake in the oven for 20-25 minutes, or until cheese is melted and bubbly.
  7. Garnish with chopped cilantro and serve hot.

Notes

You can assemble the enchiladas ahead of time and refrigerate them, just add extra baking time. Consider using different cheeses for variety.
