  • 4 lbs beef short ribs
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 tablespoons olive oil

Instructions

  1. Season the beef short ribs generously with salt and pepper, letting the flavors sink in.
  2. Brown the short ribs in a large skillet with heated olive oil over medium-high heat until browned on all sides.
  3. Transfer the browned ribs to the slow cooker.
  4. Sauté the chopped onions and minced garlic in the same skillet until softened and fragrant.
  5. Make the flavorful sauce by stirring in beef broth, red wine, Worcestershire sauce, brown sugar, thyme, and rosemary and bringing it to a simmer.
  6. Combine the simmering sauce with the short ribs in the slow cooker, cover, and set to cook on low for 8 hours.
  7. Serve the beef hot with your favorite sides.

Notes

For a thicker sauce, consider reducing it on the stove after cooking. Leftovers can be stored for up to 3 days in the refrigerator.
