  • 4 chicken thighs, boneless and skinless
  • 2 cups fresh pineapple, chopped into chunks
  • ½ cup soy sauce
  • 1 tablespoon fresh ginger, grated
  • 2 cups rice (for serving)

Instructions

  1. Place the chicken thighs in the slow cooker.
  2. Add fresh pineapple chunks, soy sauce, and grated ginger.
  3. Stir to combine and cover the slow cooker.
  4. Cook on low for 6-8 hours or on high for 4 hours.
  5. Once cooked, serve the chicken and sauce over rice.

Notes

For extra flavor, marinate the chicken in soy sauce and ginger overnight before cooking. Leftovers can be stored in the fridge for up to 4 days or frozen for 3 months.
