Ingredients

  • 34 pound pork roast
  • 2 tbsp olive oil
  • 1 cup chicken broth
  • 1 tsp rosemary
  • 1 tsp thyme
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Score the pork roast lightly on the fat side with shallow cuts.
  2. Mix together the rosemary, thyme, garlic powder, salt, and pepper in a bowl.
  3. Brush the olive oil generously on the pork roast and rub the herb mixture all over it.
  4. Place the seasoned pork roast in the slow cooker and pour the chicken broth around it.
  5. Cook on low for 6-8 hours or high for 3-4 hours until the internal temperature reaches 160°F.
  6. Let the roast rest for about 10 minutes before slicing.

Notes

To enhance flavor, marinate overnight. For a crispy exterior, sear the roast in a hot pan before slow cooking.
