Ingredients

Scale
  • 1 lb ground beef (85/15 blend)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 slices sharp cheddar cheese
  • 1/2 cup mayonnaise
  • 1 tbsp ketchup
  • 1 tbsp sweet pickle relish
  • 1 tsp white vinegar
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder
  • 1 pinch salt (for special sauce)
  • 1 pinch black pepper (for special sauce)
  • 4 cups chopped romaine lettuce
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup red onion (thinly sliced)
  • 1/2 cup dill pickle chips (drained well)

Instructions

  1. In a small bowl, combine mayonnaise, ketchup, sweet pickle relish, white vinegar, paprika, garlic powder, and a pinch each of salt and pepper. Stir until smooth and set aside.
  2. Divide the ground beef into four equal portions and form into loose balls without compacting.
  3. Heat a large cast-iron skillet or griddle over high heat for about 4 minutes until smoking hot.
  4. Place the beef balls on the hot skillet and press down hard with a spatula for 10-15 seconds until each patty is about 1/4-inch thick. Season immediately with salt and pepper.
  5. Cook the patties undisturbed for 2 minutes until edges are dark mahogany brown and crispy.
  6. Flip the patties and top each with a slice of cheddar cheese. Cook for 60-90 seconds until the cheese is melted and bubbly.
  7. Remove the patties and allow them to rest for 1 minute. Then, chop into 1-2 inch pieces.
  8. In four bowls, divide the chopped romaine as the base. Top with cherry tomatoes, red onion, dill pickle chips, and chopped cheeseburger pieces. Drizzle with special sauce and serve immediately.

Notes

Allow the skillet to preheat thoroughly for the perfect sear. Customize toppings as desired.
