Ingredients

  • 1.5 lbs Fingerling potatoes
  • 3 tbsp Olive oil
  • Salt
  • Pepper
  • Fresh herbs (like rosemary or thyme)

Instructions

  1. Boil the fingerling potatoes in a pot of salted water until tender, about 15-20 minutes.
  2. Drain the potatoes in a colander and let cool slightly.
  3. Preheat the oven to 475°F (245°C).
  4. Smash each potato gently using a fork or the bottom of a glass.
  5. Season the smashed potatoes with olive oil, salt, pepper, and fresh herbs.
  6. Bake the potatoes for 20-25 minutes until golden brown and crispy.
