Ingredients

Scale
  • 45 pounds pork shoulder
  • 2 tablespoons paprika
  • 1 tablespoon brown sugar
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • 1 cup apple cider vinegar
  • 1/2 cup barbecue sauce

Instructions

  1. Preheat the smoker to 225°F (107°C).
  2. In a bowl, combine the paprika, brown sugar, salt, black pepper, cumin, garlic powder, onion powder, and cayenne pepper.
  3. Rub this fragrant spice mixture all over the pork shoulder.
  4. Place the pork in the smoker, aiming for an internal temperature of 190°F (88°C).
  5. Once you’ve hit the desired temperature, carefully wrap the pork in foil and let it rest for 30 minutes.
  6. Using two forks, shred the pork until it’s beautifully pulled apart and mix in the apple cider vinegar and barbecue sauce.

Notes

For serving, place the pulled pork on soft burger buns with coleslaw. Store leftovers in an airtight container; they last about 3-4 days in the fridge.
