Delicious S’mores French Macarons that capture the classic campfire treat with a rich chocolate ganache, fluffy marshmallow filling, and a sprinkle of graham cracker crumbs.

Ingredients

  • 125g almond flour
  • 125g powdered sugar
  • 100g egg whites
  • 30g granulated sugar
  • 1 tsp vanilla extract
  • Chocolate ganache (for filling)
  • Marshmallow fluff (for filling)
  • Graham cracker crumbs (for garnish)

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a bowl, sift together 125g almond flour and 125g powdered sugar.
  3. In another bowl, whisk 100g egg whites until frothy. Gradually add 30g granulated sugar, whisking until stiff peaks form, then incorporate 1 tsp vanilla extract.
  4. Gently fold the dry mixture into the whipped egg whites until the batter flows smoothly.
  5. Transfer your batter to a piping bag fitted with a round tip. Pipe small circles onto the baking sheet.
  6. Let the piped macarons rest at room temperature for 30 minutes.
  7. Bake for 15-20 minutes or until set and easily lifted from the parchment.
  8. Spread chocolate ganache and marshmallow fluff on the bottom of one macaron shell, then top with another shell.
  9. Roll the edges of assembled macarons in graham cracker crumbs.

Notes

Store leftover macarons in an airtight container in the refrigerator for up to 5 days. Allow to come to room temperature before serving.
