A simple yet delicious focaccia bread that is soft, airy, and perfect for dipping or making sandwiches.

Ingredients

  • 500g all-purpose flour
  • 350ml water
  • 100g sourdough starter
  • 10g salt
  • Olive oil (for drizzling)
  • Fresh herbs (optional, for topping)
  • Coarse sea salt (for topping)

Instructions

  1. Combine flour and water in a large mixing bowl until no dry flour remains.
  2. Add sourdough starter and salt, mixing until well combined.
  3. Let the dough rise at room temperature for 4-6 hours, stretching and folding every 30 minutes.
  4. Prepare a baking sheet by greasing it with olive oil and pour the dough onto it, stretching gently to fit.
  5. Rest the dough for another 30 minutes, covered.
  6. Preheat the oven to 425°F (220°C).
  7. Dimple the dough surface with your fingers, drizzle with olive oil, and sprinkle with sea salt and herbs if desired.
  8. Bake for 20-25 minutes or until golden brown.
  9. Cool slightly before slicing and serving.

Notes

Ensure your sourdough starter is active and bubbly for the best rise. This bread can be stored for 2-3 days at room temperature, or frozen for longer storage.
