  • 4 medium potatoes, peeled and diced
  • 4 strips of bacon, chopped
  • 1 onion, chopped
  • Salt and pepper to taste
  • Oil for frying (optional)

Instructions

  1. In a large skillet, cook the chopped bacon over medium heat until crispy.
  2. Remove the bacon and set aside, leaving some drippings in the pan.
  3. Add the diced potatoes to the skillet and cook, stirring occasionally, until they start to brown.
  4. Add the chopped onion and continue to cook until the potatoes are tender and the onions are translucent.
  5. Stir in the crispy bacon, season with salt and pepper, and serve hot.

Notes

For extra crispy potatoes, let them sit without stirring for a few minutes before flipping. You can add bell peppers or garlic for additional flavor.
