A vibrant and fresh Southwest Chicken Salad, perfect for summer gatherings and celebrations.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, cooked or canned
  • 1 bell pepper, diced
  • 1 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1/4 cup lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Combine the base ingredients: In a large bowl, combine the cooked chicken, black beans, corn, diced bell pepper, avocado, halved cherry tomatoes, diced red onion, and chopped cilantro.
  2. Whisk the dressing: In a small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper.
  3. Dress the salad: Pour the dressing over the bowl of salad ingredients and gently toss everything together.
  4. Chill & serve: Serve the salad chilled for the best flavor experience.

Notes

Best enjoyed fresh. Store leftovers in an airtight container for up to 2 days. Add avocado just before serving to maintain its texture.
