A classic Italian dish featuring creamy sauce, crispy pancetta, and perfectly cooked spaghetti.

Ingredients

  • 400g spaghetti
  • 4 large eggs
  • 100g grated Parmesan cheese
  • 150g pancetta or guanciale
  • Freshly cracked black pepper
  • Salt (for the pasta water)
  • 1 clove garlic (optional)

Instructions

  1. Cook the spaghetti: Boil salted water and cook spaghetti until al dente (8-10 minutes).
  2. Prepare the pancetta: Sauté pancetta in a pan over medium heat until crispy (5-7 minutes).
  3. Whisk together eggs and cheese: Mix eggs with grated Parmesan until creamy.
  4. Combine pasta and pancetta: Drain spaghetti and add to the pan with pancetta.
  5. Create the creamy sauce: Off heat, mix in egg and cheese mixture, stir quickly.
  6. Season to taste: Add black pepper and salt as needed.
  7. Serve immediately: Plate with more Parmesan and black pepper.

Notes

Use high-quality pancetta or guanciale for the best flavor. Store leftovers in an airtight container for up to 2 days.
