A comforting and healthy alternative to traditional pasta dishes, this Spaghetti Squash Casserole combines the lightness of squash with hearty ground turkey and savory marinara sauce.

  • 1 medium spaghetti squash
  • 1 cup cooked ground turkey or beef
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds. Brush the inside with olive oil and season with salt and pepper. Place cut-side down on a baking sheet and roast for 30-40 minutes, or until tender.
  3. Heat a tablespoon of olive oil in a skillet over medium heat. Add in the chopped onion and minced garlic, sautéing until softened and fragrant, about 4-5 minutes.
  4. Add the cooked ground turkey or beef to the skillet. Stir in the marinara sauce and let the mixture simmer for about 5 minutes, allowing the flavors to meld.
  5. Scrape out the squash strands with a fork once cooked. Add these to the meat mixture in the skillet, stirring to combine all ingredients.
  6. Pour the mixture into a casserole dish and sprinkle generously with shredded mozzarella and grated Parmesan cheese.
  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Garnish with fresh basil if desired, and serve hot.

Notes

Feel free to switch up the proteins; ground chicken, sausage, or plant-based crumbles work beautifully. This dish can also be made ahead of time.
