A vibrant and flavorful Spanish rice recipe that is easy to make and perfect for any occasion.

  • 2 cups long-grain white rice
  • 4 cups vegetable broth
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 tsp paprika
  • 1 tsp cumin
  • Salt to taste
  • Pepper to taste
  • Olive oil

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and bell pepper, and sauté until soft and fragrant, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the long-grain white rice to the skillet, stirring to coat it with the oil and vegetables.
  5. Pour in the vegetable broth and the can of diced tomatoes.
  6. Sprinkle in the paprika, cumin, salt, and pepper; stir to combine.
  7. Raise the heat slightly and bring the mixture to a boil, then reduce to a simmer, covering the skillet for 20 minutes.
  8. Fluff the rice with a fork and serve hot.

Notes

Rinse the rice before cooking to avoid stickiness. Use smoked paprika for a different flavor.
