A vibrant and flavorful dish featuring ground turkey, fresh vegetables, and a zesty Bang Bang sauce, perfect for weeknight dinners.

  • 1 lb ground turkey
  • 2 cups cooked rice
  • 1/4 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • 1 cup shredded carrots
  • 1 cup shredded purple cabbage
  • 1 avocado, sliced
  • Green onions, sliced (for garnish)
  • Cilantro, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, cooking until softened, about 3 minutes.
  2. Add the ground turkey to the skillet, breaking it apart gently. Sprinkle in the chili powder, ground cumin, smoked paprika, salt, and black pepper, cooking until the turkey is no longer pink, about 6-8 minutes.
  3. Whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar in a small bowl to make the Bang Bang sauce.
  4. Divide the cooked rice into bowls, top with the cooked ground turkey, and layer in shredded carrots, shredded purple cabbage, and avocado slices.
  5. Drizzle each bowl with Bang Bang sauce.
  6. Garnish with sliced green onions and chopped cilantro before serving.

Notes

Leftovers can be stored in airtight containers for up to 3 days. Reheat with a splash of water to keep the rice moist.
