Spicy Black Bean Mushroom Fritters

Delicious and satisfying snack or appetizer made with black beans and mushrooms, spiced to perfection.

Ingredients

  • 1 can black beans, rinsed and drained
  • 1 cup mushrooms, finely chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 egg
  • Oil for frying

Instructions

  1. In a mixing bowl, mash the black beans until they are mostly smooth.
  2. Stir in the chopped mushrooms, breadcrumbs, onion, garlic, cumin, chili powder, salt, and pepper until everything is well mixed.
  3. Add the egg and mix again until the mixture is fully combined.
  4. Form the mixture into small patties.
  5. Heat oil in a frying pan over medium heat.
  6. Fry the patties for about 3-4 minutes on each side until they turn golden brown.
  7. Drain the fritters on paper towels and serve them hot.

Notes

Serve with salsa, ranch dressing, or avocado dip. Store in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
