Ingredients

Scale
  • 4 medium potatoes, peeled and diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 stalks celery, diced
  • 4 cups chicken or vegetable broth

  • Crumbled bacon (optional)

Instructions

  1. Sauté the onion, garlic, bell pepper, and celery over medium heat for about 5 minutes until softened.
  2. Add the diced potatoes, Cajun seasoning, smoked paprika, and broth. Bring to a boil, then reduce heat and let simmer for 20 minutes.

  4. Stir in the heavy cream and heat through for an additional 5 minutes.
  5. Adjust seasoning with salt and pepper to taste.
  6. Serve hot, garnished with chopped green onions and crumbled bacon if desired.

Notes

For a lighter version, substitute heavy cream with half-and-half or a plant-based alternative.
