A quick and satisfying weeknight meal featuring tender chicken, crisp broccoli, and fragrant rice noodles, all brought together with spicy garlic flavors.

  • 2 boneless, skinless chicken breasts
  • 2 cups broccoli florets
  • 8 oz rice noodles
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Cook the rice noodles according to package instructions, then set aside.
  2. In a large pan, heat the sesame oil over medium-high heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute.
  3. Season the chicken breasts with salt and pepper. Add the seasoned chicken to the pan and cook for about 5-7 minutes per side until fully cooked. Remove from the pan and let rest before slicing.
  4. Add broccoli florets and a splash of water to the pan. Cover and steam for about 3-4 minutes until tender but still vibrant green.
  5. Add the cooked rice noodles and soy sauce to the pan, stirring to combine.
  6. Serve in bowls, topping with sliced chicken and green onions.

Notes

For added texture, toss in some toasted sesame seeds before serving. You can substitute broccoli with snap peas or spinach, and add tofu for a vegetarian option.
