A vibrant and refreshing salad that combines mixed greens, black beans, corn, and a zesty lime dressing for a fiesta in a bowl.

  • 1 cup black beans, rinsed and drained
  • 1 cup corn, canned or frozen
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the mixed greens, black beans, corn, red bell pepper, avocado, cherry tomatoes, red onion, and cilantro.
  2. In a small bowl, whisk together lime juice, olive oil, chili powder, cumin, salt, and pepper.
  3. Drizzle the dressing over the salad and toss gently to combine.
