A delightful and easy frittata made with fresh spinach and creamy feta, perfect for breakfast or brunch.

  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup milk
  • 1/4 cup onion, diced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare yourself for the deliciousness to come!
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onions and sauté until they become soft and translucent, releasing their sweet aroma.
  3. Next, add the chopped spinach to the skillet. Cook until it’s beautifully wilted.
  4. In a separate bowl, whisk together the eggs, milk, salt, and pepper.
  5. Gently stir in the crumbled feta cheese and your cooked spinach mixture.
  6. Pour the egg mixture into the skillet and allow it to cook for a few minutes until the edges start to set.
  7. Carefully transfer your skillet to the oven and bake for 15-20 minutes or until the frittata is set and the top has a lovely golden hue.
  8. Let the frittata cool for a few minutes before slicing. Serve warm or at room temperature.

Notes

Pairs well with a light salad or crusty bread. Store leftovers in an airtight container in the refrigerator for 3-4 days.
