A delightful combination of spinach and ricotta stuffed inside tender chicken breasts, perfect for weeknight dinners or special occasions.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup ricotta cheese
  • 1 cup fresh spinach, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix the ricotta cheese, chopped spinach, Parmesan cheese, minced garlic, salt, and pepper in a bowl until well blended.
  3. Slice a pocket into each chicken breast carefully.
  4. Stuff each chicken breast with the ricotta mixture.
  5. Place the stuffed chicken breasts in a baking dish and drizzle lightly with olive oil.
  6. Bake in the preheated oven for 25-30 minutes until cooked through.
  7. Serve hot and enjoy!

Notes

Ensure not to overstuff the chicken. You can use shredded rotisserie chicken for a quicker version.
