Deliciously flaky pastries filled with a savory mixture of spinach and ricotta, perfect as snacks or appetizers.

Ingredients

  • 1 sheet of puff pastry
  • 1 cup ricotta cheese
  • 2 cups fresh spinach, cooked and chopped
  • 1/2 cup grated Parmesan cheese
  • 1 egg, beaten
  • Salt and pepper to taste
  • Olive oil for brushing

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix ricotta cheese, cooked and chopped spinach, grated Parmesan cheese, and beaten egg in a bowl. Season with salt and pepper.
  3. Roll out the puff pastry on a floured surface, cut it into squares or rectangles.
  4. Place a spoonful of the filling in the center of each pastry square.
  5. Fold the pastry over the filling and press the edges to seal.
  6. Brush the top of each roll with olive oil.
  7. Line a baking sheet with parchment paper and place the rolls on it.
  8. Bake for 15-20 minutes until golden brown.
  9. Serve warm as an appetizer or snack.

Notes

Can be paired with a light salad or marinara sauce. Store leftovers in an airtight container for up to 2 days.
