A warm and nourishing split pea soup that brings comfort and nostalgia with every spoonful.

Ingredients

  • 1 cup dried split peas
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 bay leaf

Instructions

  1. Rinse the dried split peas under cold water and set them aside.
  2. Sauté the chopped onion, carrots, and celery in a large pot over medium heat until softened, about 5-7 minutes.
  3. Stir in the minced garlic and thyme, cooking for an additional minute.
  4. Add the rinsed split peas, vegetable broth, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 90-120 minutes.
  5. Blend the soup with an immersion blender to your desired consistency.
  6. Adjust the seasoning as necessary and serve warm.

Notes

Pairs well with crusty bread or warm biscuits. Leftovers can be refrigerated for 4-5 days or frozen for up to 3 months.
