Delightful blondies filled with pastel sprinkles, a hint of lemon, and creamy white chocolate, perfect for spring gatherings.

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1 cup pastel spring sprinkles
  • 1/2 cup white chocolate chips

Instructions

  1. Preheat the oven to 350°F and line an 8×8 inch baking pan with parchment paper.
  2. Combine the flour, baking powder, and salt in a bowl.
  3. Whisk together the melted butter, granulated sugar, and brown sugar until smooth.
  4. Add the eggs one at a time, incorporating them fully before adding the vanilla extract and lemon zest.
  5. Fold the dry ingredients into the wet mixture until just combined.
  6. Incorporate the pastel sprinkles and white chocolate chips.
  7. Transfer the batter into the prepared pan and smooth the top.
  8. Bake for 18 to 22 minutes until the edges are golden; a toothpick should have a few moist crumbs.
  9. Cool completely in the pan before lifting out and cutting into squares.

Notes

For a gooier texture, remove the blondies from the oven with some moist crumbs on the toothpick.
