Ingredients

  • 1 cup almond flour
  • 1/2 cup rolled oats
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Green food coloring (optional)
  • Chocolate chips or dried fruit for mixing in (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the almond flour, rolled oats, baking soda, and salt.
  3. In another bowl, whisk the egg, honey (or maple syrup), melted coconut oil, and vanilla extract together. Add green food coloring if desired.
  4. Combine the wet ingredients with the dry ingredients and stir until fully blended.
  5. Scoop tablespoons of dough onto a lined baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes or until the edges are golden.
  7. Allow the cookies to cool before serving.
