A festive sweet treat combining crunchy Rice Chex and creamy chocolate-peanut butter coating, perfect for St. Patrick’s Day celebrations.

Ingredients

  • 3 cups Rice Chex cereal
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup peanut butter
  • 1/4 cup unsalted butter
  • 1/2 teaspoon vanilla extract
  • 1 cup powdered sugar
  • Green sprinkles (for decoration)

Instructions

  1. In a large microwave-safe bowl, combine the chocolate chips, peanut butter, and butter. Microwave in 30-second intervals, stirring in between, until melted and smooth.
  2. Stir in the vanilla extract until well combined.
  3. Add the Rice Chex cereal to the chocolate mixture, and gently fold until all the cereal is coated.
  4. Place the powdered sugar in a large resealable plastic bag. Add the chocolate-coated cereal and shake until evenly coated.
  5. Spread the mixture out on a baking sheet lined with parchment paper to cool.
  6. Once cooled, sprinkle with green sprinkles before serving.

Notes

Store in an airtight container at room temperature for up to a week. For extra crunch, consider adding nuts or pretzels before shaking with powdered sugar.
