A festive treat combining rich chocolate and vibrant mint, perfect for St. Patrick’s Day celebrations.

Ingredients

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon peppermint extract
  • Green food coloring
  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large saucepan over low heat, melt the butter and stir in the granulated sugar.
  3. Remove from heat, allow to cool slightly, and stir in eggs one at a time, followed by vanilla and peppermint extracts.
  4. In a separate bowl, whisk together flour, cocoa powder, salt, and baking powder. Gradually fold into the wet mixture.
  5. Add green food coloring until desired shade is achieved.
  6. Pour batter into the prepared pan and bake for 25-30 minutes.
  7. While cooling, mix powdered sugar, milk, and peppermint extract for the frosting.
  8. Once cooled, frost brownies and cut into squares.

Notes

Serve warm with vanilla ice cream or whipped cream. Store leftovers in an airtight container for up to 3 days at room temperature or up to a week in the fridge.
