A flavorful and customizable steak burrito bowl with marinated flank steak, rice, black beans, corn, and fresh toppings.

Ingredients

  • 1 lb flank steak (thinly sliced against the grain)
  • 2 tbsp olive oil
  • 1 tbsp fresh lime juice
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • Salt and black pepper (to taste)
  • 2 cups cooked rice (white or brown)
  • 1 can (15 oz) black beans (rinsed and drained)
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 ripe avocado (diced)
  • 1/2 cup salsa (your preferred heat level)
  • 1/4 cup fresh cilantro (chopped)
  • Lime wedges (for serving)
  • Optional toppings (sour cream, shredded cheese, sliced jalapeños)

Instructions

  1. In a medium bowl, whisk together olive oil, lime juice, chili powder, cumin, garlic powder, salt, and pepper until well combined.
  2. Add the thinly sliced flank steak to the marinade and toss to coat. Allow to marinate for 15-30 minutes at room temperature.
  3. Heat a large skillet or cast-iron pan over medium-high heat until very hot.
  4. Add marinated steak in batches to the hot pan and cook each batch for 2-3 minutes per side until caramelized and reaches 140°F for medium doneness.
  5. Transfer the cooked steak to a cutting board and let it rest for 5 minutes.
  6. Assemble the bowls by dividing the cooked rice among four bowls and topping with sliced steak, black beans, corn, diced avocado, salsa, and cilantro.
  7. Serve with lime wedges and optional toppings for customization.

Notes

Great for meal prep; leftover components can be stored separately for 2-3 days. Customize toppings as desired.
