Delightful strawberry brownies with a rich chocolate base topped with a zesty lemon glaze, perfect for any occasion.

Ingredients

Scale
  • 1 cup fresh strawberries, sliced
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan.
  2. In a large bowl, combine melted butter and granulated sugar, mixing well until fully blended.
  3. Add the eggs and vanilla extract, stirring until completely incorporated into the mixture.
  4. Sift in the cocoa powder, flour, salt, and baking powder, mixing until just combined. Avoid over-mixing to keep the brownies fudgy!
  5. Gently fold in the sliced strawberries, ensuring they’re evenly distributed throughout the batter.
  6. Pour the brownie batter into the prepared baking pan, spreading it evenly for uniform baking.
  7. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  8. While waiting for the brownies to cool, whisk together the powdered sugar, fresh lemon juice, and lemon zest in a small bowl until smooth.
  9. Once the brownies are cool, drizzle the lemon glaze generously on top before slicing them into squares and serving.
