These muffins are moist and tender, bursting with fresh strawberries and a touch of tanginess from cream cheese, perfect for breakfast or a sweet snack.

  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped
  • 4 oz cream cheese, softened

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the flour, sugar, baking powder, and salt in a mixing bowl.
  3. Whisk together the melted butter, milk, egg, and vanilla extract in another bowl until fully combined.
  4. Mix the wet ingredients into the dry ingredients until just combined.
  5. Fold in the chopped strawberries and cream cheese carefully.
  6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Cool the muffins for a few minutes before transferring to a wire rack.

Notes

For an added touch, sprinkle sugar on top before baking. Store leftovers in an airtight container at room temperature for up to 2 days or freeze for up to 3 months.
