Deliciously moist muffins featuring fresh strawberries and creamy cheese, perfect for any occasion.

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cream cheese, softened
  • 1/2 cup butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Combine the flour, sugar, baking powder, and salt in a mixing bowl and whisk together.
  3. Beat the cream cheese in another bowl until smooth, then mix in melted butter, egg, and vanilla extract.
  4. Alternate adding the dry ingredients and milk to the cream cheese mixture, mixing gently until just combined.
  5. Fold in the chopped strawberries gently.
  6. Divide the batter amongst the muffin cups, filling each about 2/3 full.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Cool slightly before removing from the tin.

Notes

Best enjoyed fresh; can be stored in an airtight container for up to 3 days.
