  • 1 teaspoon vanilla extract

  • 1 cup fresh strawberries, pureed

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined. Stir in the pureed strawberries.
  6. Scoop tablespoon-sized portions of dough and roll them into balls.
  7. Roll each ball in powdered sugar until fully coated.
  8. Place dough balls on a parchment-lined baking sheet, spacing them a few inches apart.
  9. Bake for 12-15 minutes, or until the edges are set and the tops are crinkled.
  10. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Store cookies in an airtight container at room temperature for up to 5 days. Freeze for longer storage.
