Delicious strawberry ice cream sandwiched between two homemade cookies, bringing back the nostalgia of summer days.

Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup sugar
  • 1 cup heavy cream
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 batch of cookies (chocolate chip, sugar, or your choice)
  • Additional strawberries for garnish (optional)

Instructions

  1. Macerate the strawberries with sugar for 30 minutes until they release their juices.
  2. Whisk together the heavy cream, milk, and vanilla extract.
  3. Add the strawberry mixture to the creamy base and combine well.
  4. Churn the mixture in an ice cream maker according to manufacturer’s instructions.
  5. Bake the cookies while the ice cream is churning.
  6. Assemble the ice cream sandwich using cookies and scoops of ice cream.
  7. Freeze for about 2 hours before serving.

Notes

For extra flavor, consider adding lemon juice to the strawberry mixture. You can also use frozen strawberries; just thaw and drain excess moisture.
