A delightful quick bread that captures the essence of summer with the sweetness of strawberries and a zing of fresh lemon.

  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 cup chopped strawberries
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Mix together the flour, sugar, baking powder, and salt.
  3. Cream the softened butter until fluffy, then gradually add in the milk, lemon juice, lemon zest, and vanilla extract.
  4. Combine the wet and dry ingredients until just mixed.
  5. Fold in the chopped strawberries.
  6. Pour the batter into the prepared loaf pan and bake for 50-60 minutes.
  7. Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
