A delightful strawberry shortcake featuring tender biscuits, sweet strawberries, and whipped cream, perfect for summer gatherings.

  • 2 cups fresh strawberries, sliced
  • 1/2 cup sugar
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • Whipped cream for topping

Instructions

  1. Sweeten the strawberries by combining them with sugar in a bowl and letting them sit for 30 minutes.
  2. Preheat the oven to 425°F (220°C). In a separate bowl, mix flour, baking powder, and salt. Add the cubed cold butter and mix until crumbly.
  3. Combine heavy cream and vanilla extract, stirring until just combined.
  4. Shape the dough on a floured surface, then roll it out and cut into rounds.
  5. Bake the shortcakes for 12-15 minutes until lightly golden.
  6. Cool the shortcakes on a wire rack.
  7. Assemble the shortcakes by layering strawberries and whipped cream between them.
