Delightful truffles inspired by classic strawberry shortcake, filled with creamy strawberry goodness and coated in white chocolate.

Ingredients

  • 1 pound fresh strawberries, hulled
  • 1 cup heavy cream
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups crushed shortbread cookies
  • 1 cup white chocolate chips
  • Sprinkles for garnish (optional)

Instructions

  1. Puree the strawberries in a blender until smooth.
  2. Cream the cream cheese until creamy; add pureed strawberries, heavy cream, powdered sugar, and vanilla extract, mixing until light and fluffy.
  3. Add in the crushed shortbread cookies until combined.
  4. Chill the mixture for about 30 minutes in the refrigerator.
  5. Form small portions of the mixture into balls.
  6. Melt the white chocolate chips in a microwave or double boiler.
  7. Dip each truffle into the melted chocolate, letting excess drip off.
  8. Garnish with crushed cookies or sprinkles, if desired.
  9. Chill until ready to serve.

Store in an airtight container in the refrigerator for up to one week or freeze for up to three months.
